The Life of a Non-Traditional College Student

So, I pull a lot of late nighters. I'm not much of a morning person, and I have lots of homework that usually has to wait until the tribe is in bed. This is one of my late night snacks:

Brown Sugar Dijon Brie

It is crazy amazing. I first had it at a pampered chef party I hosted. And I make it from time to time.

Ingredients:
1/2 cup sliced almonds, divided
1/2 cup packed brown sugar
1 tbsp Dijon mustard
1 4-in. round (8 oz) Brie cheese with rind, room temperature
1 loaf (16 oz) French baguette
Vegetable oil

Directions:
1. Preheat oven to 425°F. Coarsely chop 1/4 cup of the almonds using Food Chopper. In Small Batter Bowl, combine chopped almonds, sugar and mustard; mix well using Skinny Scraper.
2. Cut Brie in half horizontally using Utility Knife. Place one half of Brie, cut side up, onto center of Large Round Stone with Handles. Spread half of the sugar mixture evenly over bottom half of Brie using Small Spreader. Top with remaining half of Brie, cut side up. Spread remaining sugar mixture over Brie; sprinkle with remaining almonds.
3. Using Bread Knife, cut baguette on a bias into twenty-four 1/4-inch-thick slices. Arrange baguette slices around Brie; spray with oil using Kitchen Spritzer. Bake 8-10 minutes or until baguette slices are golden brown and Brie begins to soften. Remove from oven; let stand 5 minutes before serving.
Yield: 12 servings

Happy Snacking!!

Sassy Supper #1: Molten Lava Cake

I was thrilled when my friend Bobbie said that we should get together and try some new recipes out. I mentioned that since I am a horrible and lack good recipes we should all get a copy of whatever we make. And that was how it started. We mentioned it to a few friends and Michelle even offered to be the first hostess. We decided that hostess picks the theme and Michelle did not disappoint. Our first theme was "TOP SECRET". What a fabulous site! It seemed that there was a lot of main courses being selected so I opted to go for the sweet finish, Chili's Molten Lava Cake!

Here are the cakes fresh from the oven! I used devil's food cake and a JUMBO muffin pan.

Here is the finished product! It was crazy AMAZING!!

These are so easy to make too! I trimmed off the top of the muffin so that when I turned it upside down the now bottom was flat. I then cut off a across the top (which was the bottom) making a lid. Then I scooped out some of the middle of the cake. Using caramel topping I made a swirly design on a plate, placed the cake on the plate and filled the middle with hot fudge. Then I put the lid back on the cake, put a scoop of vanilla bean ice cream on it, then topped with chocolate magic shell. Voila!!!

I think I can get used to this! Well, maybe I should try food food next. tee hee.
